Carolina Rouco Chao serves as the Export Manager at Paco & Lola, a prominent winery located in the Rías Baixas region of Spain. Paco & Lola is recognized for its modern approach to winemaking and its distinctive polka-dot branding. Established in 2005, the winery emerged from a collaboration of independent winegrowers in O Salnés, forming the "Sociedad Cooperativa Vitivinícola Arousana," which has grown to over 400 members, making it the largest cooperative in the DO Rías Baixas.

The winery manages nearly 500 acres of vineyards across more than 1,800 plots, primarily cultivating Albariño grapes. Paco & Lola is committed to sustainable winegrowing practices, integrating advanced technology with traditional methods to produce high-quality wines that reflect the unique terroir of the region.
